Gingerbread Loaf Recipe - Keto Friendly

Introduction

Keto Friendly Gingerbread Loaf Recipe | Dr. Janine In this video, Dr. Janine shares her recipe for a delicious keto-friendly gingerbread loaf that will remind you of your favorite coffee shop’s version. Loaded with protein and fiber, this Gingerbread Loaf makes a great breakfast or afternoon snack.

Ingredients

½ cup + 2 tbsp Butter, room temperature

½ cup Monk Fruit or Erythritol Sweetener

4 Large Eggs

¼ cup Almond Flour

¼ cup Coconut Flour

2 scoops Vitatree Whey Protein Powder (Vanilla or Unflavored)

24 capsule Vitatree VitaMucil opened (2tbsp psyllium husk powder)

1 tsp Baking Soda

1 ½ tsp Ground Ginger

2 tsp Ground Cinnamon

1/8 tsp Ground Cloves

¼ tsp Ground Nutmeg

¼ tsp Salt

¼ cup Water

1 tbsp Molasses

½ cup Cream Cheese, room temperature

2/3 cup Powdered Sweetener, Monk Fruit or Swerve

1 tsp Vanilla Extract

1 tbsp Cream, more if needed

 

Directions

1. Preheat the oven to 350°F. Grease a 9" loaf pan, and line it with parchment paper.

2. In a large mixing bowl, cream ½ cup butter and sweetener together until light and fluffy. Add the eggs, one at a time, and mix well to combine. Add the molasses.

3. In another mixing bowl, stir together the almond flour, coconut flour, Protein powder, psyllium husk powder, baking powder, ginger, cinnamon, nutmeg, cloves, and salt. Use a whisk to make sure there are no lumps.

4. Add the dry ingredients to the wet ingredients, and stir to combine. Add the water, and stir until smooth.

5. Spoon the batter into the prepared loaf pan. Bake for 35 minutes, or until a toothpick inserted into the center of the loaf comes out clean.

6. While the loaf is baking cream together cream cheese, 2tbsp butter, powdered sweetener, vanilla extract, and cream.  Add more cream if necessary to reach desired consistency

7. Once the loaf has cooled spread icing over top, slice, and enjoy.
